  • Superrrr easy way to make my mother @babiedc’s red curry. In a roasting pan, add chicken pieces, coriander powder, cumin, few cardamom pods, few cloves, a cinnamon stick, lots of paprika, 
little bit of turmeric, little bit of chili powder, ginger/garlic paste, fried onions and salt. Add a bit of canola oil. Mix it all together. Now add some potatoes cut in pieces (red potatoes are best; don’t use new potatoes). Finally, add water nearly to the top of the mixture (I know it sounds crazy, but it works). Cover with foil and stick the pot in the oven. It takes 1-1.5 hours depending on the chicken pieces. Check and adjust the seasoning. Serve! 🥘
